After leaving college me and my boyfriend fell headfirst into full time employment. After saving up each payday we figured we deserved a holiday. We thought that a little bit of luxury might be what we needed especially as it coincided with our first anniversary. We settled with the Grand Bahia Principe Coba in Mexico, for an all inclusive 2 week stay.

Having never traveled further than Spain the 10 hour flight was a bit of a struggle, although Thomson's selection of movies eased the pain. I can't say I enjoyed the on-flight meals; the warm plastic lidded dishes they were served in was not what I considered appetizing. Instead I lined my stomach with minstrels and crispy M&Ms.

On arrival at the hotel I was amazed at the size of the lobby and the bell boys running to help us with our luggage.

The room was cool, the bed absolutely MASSIVE and the mini bar stocked daily. So far things were going good. With luck our room was just off the pool with the swim up bar which we frequented daily. With Mojitos, amaretto and tequila on tap, I had found true inner peace.

The food was just as lovely and it was fantastic having the chef stations where they made your food to order.
Breakfast was my all time favorite. Each day I had American Pancakes and Nutella before wandering down to the pool in my teeny tiny swimsuit feeling beautifully bloated.

There was also the choice of restaurants around the resort and one Saturday we booked to eat at Don Pablo. The food was excellent and the champagne was refilled as soon as the contents of my glass had mysteriously evaporated.
A 3 course meal was served, tabbouleh with figs and other fruit for starters, salmon steak and tagliatelle for main, and chocolate tart for dessert.

Most days we chilled by the pool or beach, reading and drinking, and in the evenings we went to the different bars, listened to the the live music, and on the 2nd of May we watched the Mayweather- Pacquiao fight live on the big screens in the Hacienda square which was an incredibly lively atmosphere.

It was a lovely holiday and I am very thankful I was able to spend it with my favorite person.

I was very sad to come home but at least i can begin to plan next years adventure.
